The mango is one of the most commonly consumed fruits in the tropical countries around the world, distinctively flavoured, and seductively sweet with notes of acidity. A mango variates between sweet and tart (leaning more on the sweet side), depending on how ripe said mango is.  As the fruit matures, it turns from green to a deep, golden yelllow, progressively becoming softer and sweeter as it ripens. However, judgement by colour alone is ineffective as not all mangos change colour as they ripen. To remedy this issue, give the mango a quick gentle sqeeze. When ripe, mangos feel soft when given a gentle squeeze, and when a sweet fragrant scent emanates from the stem-end of the fruit. Our MONIN Mango puree is wonderfully viscous and richl, giving an excellent depth of flavour, and ending with a long sweet finish.

To better accentuate the richness of our MONIN Mango puree, we have created a cocktail using the concept of a Lassi as the base. A ‘Lassie’ is a popular traditional yogurt-based drink from India, combining yogurt with water, spices, and sometimes fruit. We have replicated a traditional lassie, and modernised it using our MONIN Mango puree, egg white for body and MONIN Vanilla to finish off the sweetening element of the lassie. To combat this slightly sweeter version of a lassie, we add fresh lemon juice and a nice crisp vodka into the mix; light on the palate, and pulling the bite off the front of the palate. To finish, topping off the cocktail with soda water to lighten up the cocktail, and giving a refreshing touch to the experience.

To make this cocktail, start off by adding into a shaker

45ml Sipsmith Vodka

22.5ml Fresh Lemon Juice

10ml MONIN Vanilla

15ml Plain Yogurt

15ml Egg White

10ml MONIN Mango Puree

Add Ice, and shake hard for 8 seconds. Double Strain (Use a hawthorne strainer and a fine strainer) into one of the tins, then dump ice, and shake again (using the same shaker, but without the ice this time). This technique is called the ‘reverse dry-shake’; a method in effectively emulsifying the egg white, while adding dilution to the cocktail, and mixing the ingredients together.

Top with soda water, and garnish the cocktail with a slice of dehydrated mango.
